&lt;h3&gt;Cook Time: 15 minutes&lt;/h3&gt;
&lt;h3&gt;Ingredients:&lt;/h3&gt;
&lt;ul&gt;&lt;li&gt;4 beef tenderloin steaks (filet mignon), 1-1/2 inches thick (6 ounces each)&lt;/li&gt;
&lt;li&gt;1 teaspoon Worcestershire sauce&lt;/li&gt;
&lt;li&gt;1/2 teaspoon kosher salt&lt;/li&gt;
&lt;li&gt;1/4 teaspoon coarsely ground black pepper&lt;/li&gt;
&lt;li&gt;1 Tablespoon butter&lt;/li&gt;
&lt;li&gt;1/4 cup finely chopped shallots&lt;/li&gt;
&lt;li&gt;2 large cloves garlic, minced&lt;/li&gt;
&lt;li&gt;1/3 cup red wine&lt;/li&gt;
&lt;li&gt;1/2 cup beef broth&lt;/li&gt;
&lt;li&gt;1/2 cup heavy or whipping cream&lt;/li&gt;
&lt;li&gt;2 teaspoons Dijon mustard&lt;/li&gt;
&lt;li&gt;Chopped chives for garnish&lt;/li&gt;
&lt;/ul&gt;&lt;h3&gt;Preparation:&lt;/h3&gt;
&lt;p&gt;Rub &lt;a href="http://homecooking.about.com/od/howtocookwithcondiments/a/worcestersauce.htm"&gt;&lt;b&gt;Worcestershire sauce&lt;/b&gt;&lt;/a&gt; on both sides of &lt;a href="http://homecooking.about.com/od/cookingfaqs/f/faqfiletmignon.htm"&gt;&lt;b&gt;filet mignon&lt;/b&gt;&lt;/a&gt; steaks evenly, then sprinkle with &lt;a href="http://homecooking.about.com/od/spices/a/salttips.htm"&gt;&lt;b&gt;salt&lt;/b&gt;&lt;/a&gt; and &lt;a href="http://homecooking.about.com/od/foodstorage/a/pepperstorage.htm"&gt;&lt;b&gt;pepper&lt;/b&gt;&lt;/a&gt;.&lt;br/&gt;&lt;br/&gt; Heat a large heavy skillet over high heat until very hot, but not smoking. Add 1 tablespoon butter and swirl to coat the pan. Brown steak 3 to 5 minutes on one side, then turn and cook an additional 3 to 5 minutes on the other side to medium-rare doneness. (Turn only once.) Remove filet mignon steaks and keep warm while preparing the &lt;a href="http://homecooking.about.com/library/archive/blsauceindex.htm"&gt;&lt;b&gt;sauce&lt;/b&gt;&lt;/a&gt;. &lt;br/&gt;&lt;br/&gt; To the same undrained skillet, add the &lt;a href="http://homecooking.about.com/cs/vegetables/a/shallots.htm"&gt;&lt;b&gt;shallots&lt;/b&gt;&lt;/a&gt; and &lt;a href="http://homecooking.about.com/od/howtocookvegetables/a/garliccooktips.htm"&gt;&lt;b&gt;garlic&lt;/b&gt;&lt;/a&gt;, stirring for 30 seconds. Carefully pour in the &lt;a href="http://homecooking.about.com/library/archive/blwineindex.htm"&gt;&lt;b&gt;wine&lt;/b&gt;&lt;/a&gt; and stir, scraping up the browned bits from the bottom, about 2 minutes. Add broth and bring to a slow boil. Cook for 3 minute, then add heavy cream and cook until sauce begins to thicken, 3 to 5 minutes. Whisk in &lt;a href="http://homecooking.about.com/od/howtocookwithcondiments/a/mustardcooktips.htm"&gt;&lt;b&gt;Dijon mustard&lt;/b&gt;&lt;/a&gt; until smooth. Return steaks to pan, turning to cover both sides with sauce, and warm 1 minute. &lt;br/&gt;&lt;br/&gt; Serve pan sauce over warm filet mignon steaks and sprinkle with chopped &lt;a href="http://homecooking.about.com/od/foodstorage/a/chivestorage.htm"&gt;&lt;b&gt;chives&lt;/b&gt;&lt;/a&gt;. &lt;br/&gt;&lt;br/&gt; Yield: 4 servings&lt;/p&gt;

&lt;p&gt;Anything potato gets me every time.  When you are having steaks, garlic &amp; chive potato puree is like a lightening bolt to Saturday’s face.&lt;/p&gt;

&lt;p&gt;In an attempt to balance out my burrito addiction I spent some time on Saturday walking around the woods.  This ‘hike’ was more an excercise in mental health.  My goal was mostly to build up enough personal self esteem to feel good about returning to the bar.  It’s amazing how much a walk in the woods is good for the soul.&lt;/p&gt;

&lt;/blockquote&gt;</description><link>http://www.italktostrangers.org/post/62304729</link><guid>http://www.italktostrangers.org/post/62304729</guid><pubDate>Sun, 30 Nov 2008 13:11:13 -0800</pubDate></item><item><title>thanksgiving</title><description>&lt;p&gt;On Thursday nearly 24 hours before I parachutted out of france for good, I stopped by missy’s euro-thanksgiving party.  (Thanks again to the whole missy family crew who put together an american style t-giving dinner using only the finest imported ingredients).  The pumpkin pie avec real coolwhip was worth the treak across town.&lt;/p&gt;

&lt;p&gt;on my way over I swung by the monoprix to pick up some champagne.  in a heated impulse buy, I grabbed an 8 year old bottle of dom perignon.  1.) i didn’t realize it was going to be that expensive 2.) i didn’t realize how happy it would make everyone.  dom == liquid dreams to anyone on the backside of imported pumpkin pie and coolwhip…&lt;/p&gt;

&lt;p&gt;In the end the best part of the night was when as missy and her mom tried to spread t-giving cheer to the neighborhood, and a parisian bum turned his nose up at the greenbean caserole.
